Beth's White Chicken Chili

Beth Lincoln's White Chicken Chili
  • 48 oz jar Randall Deluxe Great Northern Beans

    1 large can or box Chicken Broth

    water

    4 chicken breasts

    Large Onion - chopped

    Olive Oil

    Italian Seasoning

    Crushed Red Peppers

    Minced Garlic

    Salt and Pepper to taste 

    Salsa

    Cheese - Your fav... (I like Mozzarella in mine) 

    Sour cream

    Tortilla chips

     

    Pour Great Northern Beans into medium to large stock pot or crock pot.  Add about half of the chicken broth and about 2 cups of water.   Add in 3/4's of the chopped onion, a couple tablespoons of minced garlic, a teaspoon or two of crushed red pepper, and salt and pepper.  Heat to boiling and then reduce heat to medium and simmer. 

    Sautee the chicken breasts in a little bit of olive oil with the Italian Season, some minced garlic and  some onion.  Sautee until cooked through and no longer pink.  Remove from pan and cut into large chunks and add to beans and continue to simmer, stirring frequently until soup is to your desired thickness.   (use the remaining chicken broth and more water to thin down soup while cooking or when you re-heat soup)  

     Garnish with:

    • Salsa ( my salsa recipe is below), Sour Cream, Cheese, and Tortilla Chips and serve!!  Delicious!!!!   

      *Make it to your taste.... if you like it hotter add more crushed red peppers and even some jalapeno peppers, cumin... what ever you like.... its your soup!  Enjoy : ) 

 

Beth's Famous Salsa

  • 30 oz can Petite Diced Tomatoes 

  • 1 fresh bunch of Cilantro - finely minced

  • 1 onion - chopped

  • Jalepeno  Peppers - 1 or 2 fresh jalepenos minced or about 10-12 slices from jar minced the amount of jalepeno peppers depends on the amount of hottness you like

  • Garlic - 2 cloves minced or about 2 heaping tsp minced from jar

  • sugar - about 1 tsp or to taste  (optional ingredient)

  • salt - about 1 tsp or taste

Mix all together well in medium mixing bowl.  Its now ready to eat or put in the fridge for later.  Serve with chips or anything you like.  Great in salads, on tacos, as saute with chicken, topping for burgers, on eggs... enjoy to your hearts desire!!
